Acetyl acesulfame potassium ( English: Acesulfam potassium , also known as potassium amide acetyl acid , acesulfame potassium , commonly known as acesulfame ) is a non -calorie of sweetener. In the European Union, its E code (additive code) is E950 [1] . It is a German chemist Karl Kraus in 1967 Hexisite company (now Nutrinova work company) discovered by accident [2] . In terms of chemical structure, Acetochlor is a potassium salt of 2,2-dioxo 6-methyl-1,2,3-oxathiazine-4( 3H )one. It is a white crystalline powder with the molecular formula C 4 H 4 KNO 4 S and a molecular weight of 201.24 g/mol [3] .
Nature [ edit ]
Potassium sulfamate is 200 times sweeter than sucrose , comparable to aspartame , and it is two-thirds of saccharin and one-third of sucralose . Potassium sulfamate has a similar functional group to saccharin. After eating, it also has slight bitterness and metallic taste on the tongue, especially at higher concentrations. Kraft 's patent shows that the residual taste of sulfonamide can be masked by adding sodium ferulate. [4] In actual use, Acesulfame Potassium is mixed with sucralose, aspartame, and other sweeteners in order to obtain a sweetness curve similar to that of sucrose, or to mask the residual taste, or to promote a synergistic effect. Overall sweetness. Acetosulfonamide has a smaller molecular size than sucrose and can be evenly mixed with other sweeteners. [5]
Unlike aspartame, potassium beta sulfamate is thermally stable, and even under weak acid and alkaline conditions, it still has good thermal stability. So it can be used for baking, as well as long-term food placed in the baking window. However, degradation product acetoacetamide at long-term high temperature has weak toxicity. [6]
